Dessert of the month 
CARROT CAKE by Callum

 

6oz butter/marg
6oz soft brown sugar
2 eggs, beaten
8oz wholemeal flour
1 1/2 tsp bicarbonate of soda
1/2 tsp baking powder
1/4 tsp cinnamon
1/4 tsp nutmeg
1/2 tsp salt
8oz carrots
3oz raisins
2oz walnuts, chopped
1/4 tsp cardamon seeds, crushed

 

Method:

1. Cream the butter and sugar
2. Beat in the eggs
3. Sift the flour and fold into mixture
4. Add the other dry ingredients
5. Fold in carrots, raisins, walnuts and cardamon.
6. Spoon into a greased 10" loaf tin
7. Bake at 180 C for 45-50 minutes
